    Buttermilk French Onion Fritters make me Ingredients Serving Size: 4-6 people For the Onion fritters 1 large sweet onions (Vidalia or yellow), thinly sliced 2 cups buttermilk 2 tsp Worcestershire 1 ½ cups all-purpose flour ½ cup cornstarch 1 tsp garlic powder 1 tsp smoked paprika 1 tsp cayenne 1 ½ tsp salt 1 tsp black pepper Oil for frying (vegetable or peanut) For the French Onion Dip 1 large yellow onion, diced 1 tbsp unsalted butter 1 tbsp olive oil ½ tsp salt ½ tsp sugar 1 tsp garlic powder 1/4 cup sour cream 1/4 cup mayonnaise 1 oz cream cheese, softened 1/2 tsp Worcestershire sauce ½ tsp black pepper Optional: chopped chives or green onions Instructions 1. Soak Onions Add sliced onions to a bowl and cover with buttermilk and Worcestershire. Let soak at least 30 minutes (or up to overnight in the fridge). While onions are soaking, make your caramelized onions that will go in your dip. Add the butter and olive oil to a pan on medium heat. Add the onions, salt and sugar and allow to caramelize for 30 minutes until browning. Once done, set aside. 2. Build your dredge In a separate bowl, mix: flour, cornstarch, garlic powder, paprika, cayenne, salt, and pepper. 3. Heat the oil Heat oil to 350°F in large skillet. Oil line should be almost an inch from bottom of the pan. 4. Coat Grab a handful of onions from the buttermilk (let a little excess drip off). Toss in flour mixture, pressing lightly so it sticks. Use your hands to group onion into little clusters (almost a pancake shape). 5. Fry Fry in batches (don’t overcrowd!) for 2–4 minutes , until golden and crispy. Flip when they start to brown Transfer to a paper towel-lined tray. 6. Make French Onion Dip While fritters are cooling, mix your dip. In a large bowl, add all of the ingredients listed above and mix until uniform (including your caramelized onions!) Serve with fritters. French onion soup walked so these fritters could run. Prepare the Bread Bowl: Preheat the oven to 375°F (190°C). Slice off the top of each bread loaf and hollow out the center, leaving about a ½-inch thick wall. (Save the bread for dipping!) In a small bowl, mix melted butter, minced garlic, chopped parsley, and salt. Brush the inside and edges of the bread bowl generously with the garlic butter. Sprinkle Parmesan inside if using.     White Pizza Grilled Cheese make me Ingredients Serving Size: 2 sandwiches For the roasted garlic ricotta spread: 1 large head of garlic 1 tbsp olive oil ½ cup ricotta cheese 1 tsp lemon zest 1 tsp fresh lemon juice 1 tsp hot honey (plus more for drizzling) 1/2 tsp red pepper flakes (plus more for topping) ½ tsp white truffle oil Kosher salt and freshly cracked black pepper, to taste For the sandwich: 4 slices sourdough bread 1 cup shredded mozzarella cheese 8 slices prosciutto ¼ cup stracciatella cheese (or the center of 2 balls of burrata) Butter or oil, for grilling Instructions Roast the garlic: Preheat oven to 450°F Slice the top off the garlic head to expose the cloves, drizzle with olive oil, wrap in foil, and roast 45 minutes until soft and caramelized. Once cooled, squeeze the cloves into a bowl and mash into a smooth paste. Make the ricotta spread: In that same bowl, combine the mashed roasted garlic, ricotta, lemon zest, lemon juice, hot honey, red pepper flakes, truffle oil, salt, and pepper. Mix until creamy and spreadable. Taste and adjust seasoning (add more honey or lemon as desired). Assemble the sandwiches: Spread a generous layer of the roasted garlic ricotta mixture on the inside of each sourdough slice. On the bottom slices, add shredded mozzarella, then layer prosciutto and dollops of stracciatella. Drizzle with a little hot honey and sprinkle with more red pepper flakes. Top with the other slice of bread (ricotta side facing in). Grill the sandwiches: Heat a nonstick skillet or griddle over medium heat. Butter the outsides of the bread generously or oil your pan. Grill each sandwich 3–4 minutes per side, pressing gently, until golden brown and crisp with melted cheese inside. Serve! We’ve all seen the pizza grilled cheese..but have you ever seen a White Pizza Grilled Cheese? This lesser known pizza slice deserves far more recognition than it gets. Usually made with ricotta, lemon, herbs and white cheeses…it is absolutely delicious. So naturally I made it into a sandwich with crisp sourdough, prosciutto (we need protein hello), melted mozzarella, and creamy stracciatella. But the real star of this sandwich is the roasted garlic ricotta. God I wish I could bottle it. You have the tangy richness from roast garlic, brightness from that lemon zest, and heat from the hot honey and red pepper flakes.     Fluffy Buttermilk Biscuits make me Ingredients Serving Size: 12 biscuits 3 cups all-purpose flour 4 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/4 cup graulated sugar 1/2 stick cold unsalted butter, grated 1 and 1/4 cup buttermilk 1 egg, whisked with 2 tbsp whole milk (for brushing) Instructions Preheat Oven & Prepare Baking Sheet: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper. 2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, sugar and salt until well combined. Add the cold, grated butter into the dry ingredients. Use your fingers or a pastry cutter to mix the butter into the flour until it resembles coarse crumbs. You should still see little chunks of butter throughout the mixture. Slowly pour the wet ingredients (buttermilk and whole milk) into the dry mixture, stirring gently until just combined. Be careful not to overmix – the dough should be slightly lumpy. 3. Form the Dough: Turn the dough out onto a lightly floured surface. Gently pat the dough into a rectangle (about 1-inch thick). Fold the dough over itself a couple of times (about 3 folds). This helps create flaky layers in your biscuits. Add more flour if necessary. Use a biscuit cutter or a round glass (about 2-3 inches in diameter) to cut out biscuits. Press straight down, don’t twist the cutter, to ensure the biscuits rise properly. Place the biscuits on the prepared baking sheet, leaving a little space between them. 4. Brush with Egg Wash: In a small bowl, whisk together the egg and 2 tbsp of whole milk. Brush the tops of each biscuit with the egg wash for a golden finish. 5. Bake: Bake the biscuits in the preheated oven for 12-15 minutes, or until they’re golden brown on top. Let the biscuits cool for a few minutes before serving. Enjoy them warm with butter, jam, or your favorite toppings!     Chili Crunch Cutlet Sandwich make me Ingredients Serving Size: 2 sandwiches Chili Crunch Aioli ½ cup mayonnaise 2–3 tbsp chili crunch (adjust heat to taste) 1/2 tbsp honey 1 tsp lemon juice Pinch of salt Chicken Cutlets 2 thin chicken cutlets, pounded to make them thinner Salt & black pepper ½ cup flour 1 egg, beaten ¾ cup Italian breadcrumbs ¼ cup grated Parmesan Olive oil, for frying Sandwich Assembly 4 slices sourdough bread 4 slices provolone cheese 2 small balls of Burrata (or 1/2 of a regular one) 8 slices prosciutto, bunched 1/3 cup Sun-dried tomatoes, sliced Olive oil or butter, for toasting Instructions 1. Make the Chili Crunch Aioli In a small bowl, mix mayo, chili crunch, honey, lemon juice, and salt. Taste and adjust heat or acidity. Set aside. 2. Bread & Fry the Chicken Season chicken cutlets with salt and pepper. Dredge in flour, then egg, then breadcrumbs mixed with Parmesan, pressing to adhere. Heat a generous layer of olive oil in a skillet over medium-high heat. Fry chicken 3–4 minutes per side until golden brown and cooked through. Transfer to a rack or paper towel. 3. Toast the Bread I used a specific type of loaf, but if you have 2 slices of bread, heat a skillet over medium-high heat. Add 1 tbsp butter to the pan and place one slice of bread on the skillet, top with 2 slices of provolone and then the other slice of bread. Flip and toast both sides to desired crunch. Remove from heat. 4.     Mediterranean Turkey Meatballs with Tzatziki and Greek Salad make me Ingredients Serving Size: 2 For the Turkey meatballs: 1 lb. ground turkey ¼ cup panko breadcrumbs (I used cauliflower breadcrumbs to make them healthier) ¼ cup red onion, diced small ¼ cup feta cheese 3 garlic cloves, minced 1 egg 2 tsp dried oregano 1 tsp dried dill ½ tsp cumin ½ tsp salt ¼ tsp black pepper For the tzatziki sauce: 1 cup plain greek yogurt 2 Persian cucumbers, grated 1 Tbsp fresh dill (or 1 teaspoon of dried dill) 2 garlic cloves, minced 2 Tbsp lemon juice 1 Tbsp olive oil ½ tsp salt Cracked black pepper, to taste For the Greek Salad: 1 cucumber , diced 2 medium tomatoes , chopped 1 red onion , thinly sliced 1 bell pepper , chopped (any color) 1 ripe avocado , diced 1/2 cup Kalamata olives , pitted 1/2 cup feta cheese , crumbled or in blocks 1 tbsp fresh oregano (or 1 tsp dried) 1 tbsp fresh parsley , chopped Olive oil (extra virgin, for drizzling) 1-2 tbsp red wine vinegar 1 tbsp fresh lemon juice Salt and freshly cracked black pepper , to taste Instructions To make the salad: Add all vegetables to a bowl along with salad dressing and herbs and mix. Set aside to let marinate. Add cheese when you are ready to serve To make the tzatziki sauce: Wrap your grated cucumber in a few paper towels or place it in a cheese cloth and wring out as much liquid as possible. Then add your grated cucumber to a large mixing bowl along with the rest of your ingredients and stir until fully combined. (Taste and adjust your salt and pepper if needed.) Cover the bowl and keep your tzatziki in the refrigerator while you prepare the meatballs. To make the meatballs: Preheat your oven to 400 degrees and line a baking sheet with parchment paper Then add your meatball ingredients to a large bowl and mix them together with your hands. Form the mixture into 1 inch balls and let sit. Heat a large skillet on medium-high heat with 2 tbsp olive oil. Sear meatballs on all sides until a little browned, 2-3 minutes each side. And place the balls on your prepared baking sheet. Then place the meatballs in the oven and bake for 13-15 minutes.
