Chili Crunch Cutlet Sandwich

Ingredients 

Serving Size: 2 sandwiches

Chili Crunch Aioli

  • ½ cup mayonnaise

  • 2–3 tbsp chili crunch (adjust heat to taste)

  • 1/2 tbsp honey

  • 1 tsp lemon juice

  • Pinch of salt

Chicken Cutlets

  • 2 thin chicken cutlets, pounded to make them thinner

  • Salt & black pepper

  • ½ cup flour

  • 1 egg, beaten

  • ¾ cup Italian breadcrumbs

  • ¼ cup grated Parmesan

  • Olive oil, for frying

Sandwich Assembly

  • 4 slices sourdough bread

  • 4 slices provolone cheese

  • 2 small balls of Burrata (or 1/2 of a regular one)

  • 8 slices prosciutto, bunched

  • 1/3 cup Sun-dried tomatoes, sliced

  • Olive oil or butter, for toasting

Instructions 

1. Make the Chili Crunch Aioli

In a small bowl, mix mayo, chili crunch, honey, lemon juice, and salt. Taste and adjust heat or acidity. Set aside.

2. Bread & Fry the Chicken

Season chicken cutlets with salt and pepper.
Dredge in flour, then egg, then breadcrumbs mixed with Parmesan, pressing to adhere.

Heat a generous layer of olive oil in a skillet over medium-high heat. Fry chicken 3–4 minutes per side until golden brown and cooked through. Transfer to a rack or paper towel.

3. Toast the Bread

I used a specific type of loaf, but if you have 2 slices of bread, heat a skillet over medium-high heat. Add 1 tbsp butter to the pan and place one slice of bread on the skillet, top with 2 slices of provolone and then the other slice of bread. Flip and toast both sides to desired crunch. Remove from heat.

4. Assemble the Sandwich

  • Pull apart the two slices of bread and begin to layer

  • Slather of chili crunch aioli

  • Chicken cutlet

  • Buratta, broken apart

  • Sun-dried tomatoes, + a little tomato oil if desired

  • 4 prosciutto bunches

  • Another swipe of aioli on the top bread

  • Close it up and press gently

This is the sandwich you make when you want something bold and kinda unhinged. A crispy chicken cutlet, creamy burrata, salty prosciutto, and sun-dried tomatoes layered on toasted sourdough, finished with my suuuuper delish, sweet & spicy chili crunch aioli. It’s rich and sexy, spicy without overpowering, and the kind of sandwich that sits just right.
