White Pizza Grilled Cheese

Serving Size: 2 sandwiches
For the roasted garlic ricotta spread:
1 large head of garlic
1 tbsp olive oil
½ cup ricotta cheese
1 tsp lemon zest
1 tsp fresh lemon juice
1 tsp hot honey (plus more for drizzling)
1/2 tsp red pepper flakes (plus more for topping)
½ tsp white truffle oil
Kosher salt and freshly cracked black pepper, to taste
For the sandwich:
4 slices sourdough bread
1 cup shredded mozzarella cheese
8 slices prosciutto
¼ cup stracciatella cheese (or the center of 2 balls of burrata)
Butter or oil, for grilling
Instructions
Roast the garlic:
Preheat oven to 450°F
Slice the top off the garlic head to expose the cloves, drizzle with olive oil, wrap in foil, and roast 45 minutes until soft and caramelized.
Once cooled, squeeze the cloves into a bowl and mash into a smooth paste.
Make the ricotta spread:
In that same bowl, combine the mashed roasted garlic, ricotta, lemon zest, lemon juice, hot honey, red pepper flakes, truffle oil, salt, and pepper.
Mix until creamy and spreadable. Taste and adjust seasoning (add more honey or lemon as desired).
Assemble the sandwiches:
Spread a generous layer of the roasted garlic ricotta mixture on the inside of each sourdough slice.
On the bottom slices, add shredded mozzarella, then layer prosciutto and dollops of stracciatella.
Drizzle with a little hot honey and sprinkle with more red pepper flakes.
Top with the other slice of bread (ricotta side facing in).
Grill the sandwiches:
Heat a nonstick skillet or griddle over medium heat. Butter the outsides of the bread generously or oil your pan.
Grill each sandwich 3–4 minutes per side, pressing gently, until golden brown and crisp with melted cheese inside.

We’ve all seen the pizza grilled cheese..but have you ever seen a White Pizza Grilled Cheese? This lesser known pizza slice deserves far more recognition than it gets. Usually made with ricotta, lemon, herbs and white cheeses…it is absolutely delicious. So naturally I made it into a sandwich with crisp sourdough, prosciutto (we need protein hello), melted mozzarella, and creamy stracciatella. But the real star of this sandwich is the roasted garlic ricotta. God I wish I could bottle it. You have the tangy richness from roast garlic, brightness from that lemon zest, and heat from the hot honey and red pepper flakes. It’s everything you love about white pizza, reimagined between two golden slices of bread.
