For the Caramelized Onions & Shallots:
1 large onion, thinly sliced
2 shallots, thinly sliced
2 tbsp olive oil or butter
1 tbsp sugar (to help with caramelization)
1/4 cup vodka (to deglaze)
For the Dip:
8 oz cream cheese, softened
1/2 cup sour cream
1/4 cup blue cheese crumbles
1/4 cup manzanilla olives, chopped
2 tbsp olive brine (from the olive jar)
1 tsp garlic powder
1/2 tsp salt (or to taste)
1/4 tsp black pepper (or to taste)
Instructions
Step 1: Caramelize the Onions & Shallots
Heat the olive oil or butter in a skillet over medium heat.
Add the sliced onions and shallots and cook, stirring occasionally, until they begin to soften (about 5 minutes).
Add the sugar and continue to cook, stirring frequently, until the onions and shallots become golden brown and caramelized (about 20 minutes).
Deglaze the pan with 1/4 cup vodka, scraping up any browned bits from the bottom of the pan. Let the vodka cook off for another 1-2 minutes, then remove from heat.
Step 2: Prepare the Dip Base
In a large mixing bowl, combine the softened cream cheese, olive brine, garlic powder, and sour cream. Stir until smooth and fully blended.
Add the chopped manzanilla olives, blue cheese crumbles, salt and pepper. Mix until well incorporated.
Step 3: Combine the Caramelized Onions & Shallots
Once the caramelized onions and shallots have cooled slightly, add them to the dip mixture. Stir until evenly distributed.
Step 4: Chill & Serve
Transfer the dip to a serving dish and chill for at least 30 minutes in the fridge to let the flavors meld together.
Serve with crackers, chips, or sliced vegetables.
