A Naughty Cheeseburger make me Ingredients Serving Size: 4 burgers For the Patties 2 lbs ground beef (80/20), enough for 8 patties Salt & black pepper to taste 2 tsp garlic powder (optional) 8 slices American cheese 2 tbsp unsalted butter (for toasting buns) For the Big Mac Sauce with Caramelized Onions 1 cup mayonnaise 4 tbsp ketchup 2 tbsp yellow mustard 2 tbsp sweet pickle relish 1 tsp white vinegar 1 tsp paprika 1 tsp onion powder 1 tsp garlic powder 1 tsp Worcestershire Salt & pepper to taste For the Caramelized Onions 2 medium onions , finely chopped 2 tbsp butter 2 tsp Worcestershire Pinch of salt For Assembly 4 brioche buns (to make from scratch see recipe here ) Dill pickle slices (optional) Lettuce and tomato optional Instructions Step 1: Caramelize the Onions Heat butter and olive oil in a pan over medium-low heat . Add the finely chopped onions and a pinch of salt. Cook slowly, stirring occasionally. After 10 minutes, add Worcestershire. Continue cooking for 20-30 minutes , until golden brown and jammy. Set aside to cool. Step 2: Make the Big Mac Sauce In a bowl, mix mayo, ketchup, mustard, relish, vinegar, paprika, onion powder, Worcestershire and garlic powder. Refrigerate for at least 20 minutes for flavors to blend. Step 3: Smash the Patties Divide ground beef into 8 equal balls (about 2 oz each) . Brown Butter Grilled Cheese make me Ingredients Serving Size: 1 sandwich 2 slices sourdough bread 1/2 cup salted butter 3 slices fontina cheese 3 slices gruyère cheese 2 tbsp of shredded mozzarella 2 tbsp of shredded parmesan Honey, for drizzling Instructions Brown the Butter: In a small skillet over medium heat, melt the salted butter. Keep swirling the pan until the butter just begins to foam and turn brown (about 2 minutes). Add 1 piece of sliced sourdough to the butter in the pan and turn the heat to low. Build the Sandwich: Layer the fontina, gruyère, mozzarella, parmesan, and a drizzle of honey for sweetness and top with the other slice of sourdough. Grill: Grill sandwich, pressing down lightly with a spatula. Flip and grill the other side until the cheese is fully melted and the bread is toasty and golden. Finish: Remove from the skillet. Slice in half and eat immediately — that gooey, salty-sweet, nutty combo is outrageous (and naughty). I feel like I just invented the best thing ever although I know someone is going to come out and say that its been done before. Let me live in my fantasy!!! This sandwich is pure perfection. Pizza Focaccia Chicken Caesar Sandwich make me Ingredients Serving Size: 4-6 people For the Chicken Cutlets 8 thin chicken cutlets 2 tsp kosher salt 1 tsp black pepper 1 tsp garlic powder 1 cup all purpose flour 4 eggs, beaten 1 cup Italian breadcrumbs 1 cup grated Parmesan Olive oil or avocado oil, for frying For the Lemony Caesar Dressing 4 anchovy fillets 2 garlic cloves 1 tsp Dijon mustard Zest of 1 lemon 3 tbsp fresh lemon juice 1 tsp Worcestershire sauce 2 egg yolks 1/4 cup grated Parmesan 1/2 cup olive oil Kosher salt and black pepper, to taste For the Caesar Salad 2 romaine heart, finely shredded 1/4 cup grated Parmesan Fresh cracked black pepper For bread Recipe for focaccia here (can also use bread of choice!). Prep this early this morning so it can be ready for sandwiches. To the focaccia dough I added mini pepperonis, chili crunch, Italian seasoning, and a mix of shredded mozzarella and parmesan. These are added to the top (however much you want) before baking! For Assembly Zest of 1 lemon Extra shaved Parmesan Freshly cracked black pepper Some caesar dressing reserved for the bread Instructions Make the Caesar Dressing Finely chop your anchovies and garlic until a paste is formed. To a bowl combine the paste, Dijon, lemon zest, lemon juice, and egg yolk. Whisk until smooth. While whisking, slowly drizzle in the olive oil until emulsified and creamy. Add in your worcestershire, parmesan, and black pepper. Reserve a few tbsp of dressing for the bread. Cook the Chicken Season the chicken cutlets with salt, pepper, and garlic powder. Place the flour, eggs, and a mixture of Italian seasoning and Parmesan into three separate shallow bowls. Dredge each cutlet in flour, then egg, then the Parmesan-italian mixture, pressing gently to adhere. Heat about 1/4 inch of oil in a large skillet over medium heat. Fry the cutlets for 3 to 4 minutes per side until golden brown and cooked through. Transfer to a wire rack and sprinkle lightly with salt. Toss the Salad In a large bowl, toss the shredded romaine with about 1/2 cup of the Caesar dressing, Parmesan, and black pepper. The lettuce should be well coated but not soggy. Top with extra parm if desired. Build the Sandwiches If using the focaccia recipe, cut your bread to desired sizes. Spread a generous layer of Caesar dressing on both the top and bottom halves of each slice. Place the crispy chicken cutlets on the bottom slice. Top with a mound of Caesar salad, shaved Parmesan, freshly cracked black pepper and lemon zest. Close the sandwich and serve immediately. Caviar & Fried Chicken Sandwich make me Ingredients Serving Size: 4 sandwiches For the Fried Chicken: 4 boneless, skinless chicken thighs 2 cups buttermilk 1 tbsp hot sauce 1 egg 2 cups all-purpose flour 1 tsp garlic powder 1 tsp onion powder 1 tsp smoked paprika 1/2 tsp cayenne pepper Salt and pepper, to taste Vegetable oil, for frying (enough to submerge chicken) For the Caviar Lemon Aioli: 1/2 tbsp fresh dill (chopped) 1/4 cup mayonnaise 1/4 cup sour cream 1 tbsp chopped cornichons 1/2 tbsp lemon juice 1 tsp lemon zest 1 garlic clove, grated Salt and pepper, to taste 1 tin of caviar (sturgeon or whitefish works well) For the Sandwich: 4 brioche buns (lightly toasted) 1 large tomato, sliced 4 pieces green leaf lettuce (washed and dried) Instructions Step 1: Marinate the Chicken In a bowl, combine the buttermilk, egg, and hot sauce. Add salt and pepper to taste. Place the chicken breasts or thighs into the buttermilk mixture, making sure they are fully submerged. Cover and refrigerate for at least 1 hour (or up to overnight) to allow the chicken to marinate. Step 2: Prepare the Coating In a shallow dish or large bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), and salt and pepper. Remove the chicken from the buttermilk, allowing any excess to drip off, then dredge each piece of chicken in the seasoned flour, pressing down lightly to ensure an even coat. Roast Pork & Honey Ham Cuban Sandwich make me Ingredients Serving Size: 2-3 sandwiches For the Roast Pork: 1 tbsp light brown sugar 1½ tbsp chili powder 2 tsp ground cumin 2 tsp ground coriander 1½ tsp garlic powder 1 tsp onion powder 2 tsp kosher salt 1 tsp black pepper 1 (2.5 lb) pork butt roast, bone-in (you can also use boneless pork shoulder) 2 tbsp olive oil 1½ cups beef broth For the Sandwich: 1 loaf Cuban bread (or I used sourdough loaf) 8 slices Swiss cheese Yellow mustard, to taste 10 dill pickle chips Pickled jalapeños, to taste Honey (about 1 tbsp) 8 slices deli ham Butter, softened (for the outside of the bread) 2 tbsp butter, divided Instructions To make the pork: Preheat oven to 300ºF. In a small bowl, mix all spices and brown sugar. Rub mixture all over pork shoulder. Heat olive oil in a Dutch oven over medium-high. Sear pork on all sides until browned (about 7–9 minutes total). Add chicken broth, scraping any browned bits. Bring to a simmer, cover, and transfer to oven. Bake for 3 hours covered , then uncover and bake 1 hour more , until pork is fall-apart tender. Add more broth as needed to keep it moist. Shred pork with two forks. Set aside and keep warm. (This makes more pork than you need, so stash leftovers for tacos, rice bowls, or sandwiches.) To make the honey ham: Heat a cast iron skillet over medium-high. Add ham slices and sear until browned, about 1–2 minutes per side. Drizzle honey over the slices in the last 30 seconds of cooking to caramelize. Remove from heat. Lower heat to medium on the cast iron skillet. To grill the Sandwich: Slice bread into 2 portions and cut each in half lengthwise. On the same cast iron skillet, add 1 tbsp butter and place the bottom slice of 1 bread and start topping with the following: Layer in this order: Yellow mustard Swiss cheese Honey Ham Roasted Pork Pickles Pickled jalapeños Another layer of Swiss cheese Close sandwich and spread butter on the outside of the bread. Press down and flip. Continue to press down to flatten sandwich and grill on both sides. Lower heat if starting to burn. The Cuban Sandwich is my all time favorite sandwich, or at least definitely top 3. However when you take the time to make the pork from scratch, it truly sends your eyes rolling to the back of your head. Place the grated cucumber in a clean kitchen towel or paper towel and squeeze out excess moisture. This helps keep the tzatziki sauce from being too watery. Ribeye Tacos with Chimichurri make me Ingredients Serving Size: 4 tacos For the ribeye steak: 2 ribeye steaks (about 8–10 oz each) Salt and pepper (for seasoning) 1 tablespoon olive oil (for searing) For the chimichurri: 1/2 cup fresh parsley, chopped 1/4 cup fresh cilantro, chopped 1 chili pepper, diced 1 shallot, finely diced 3 cloves garlic, minced 1/4 cup red wine vinegar 1 teaspoon red pepper flakes 1/2 cup olive oil 1and 1/2 tablespoon dried oregano 1 tsp salt For the crispy mozzarella cheese skirt: 1 cup shredded mozzarella cheese 1 tablespoon olive oil (for frying) For the taco assembly: 4 flour tortillas (medium size) 1 ripe avocado (sliced) Lime wedges (for serving) Fresh cilantro (optional, for garnish) Instructions Prepare the chimichurri : In a small bowl, combine all ingredients, mix well and set aside. This will allow the flavors to meld together. Cook the ribeye : Season the ribeye steaks generously with salt and pepper on both sides. Heat 1 tablespoon of olive oil in a skillet or grill pan over medium-high heat. Sear the steaks for about 4-5 minutes per side (depending on thickness) until you reach your desired level of doneness. For medium-rare, aim for an internal temperature of 130–135°F (54–57°C). Let the steaks rest for 5 minutes before slicing them thinly against the grain. Make the Tortilla with Cheese Skirt : Sprinkle the shredded mozzarella evenly in a thin layer directly onto a skillet on medium-high heat. Create a circular shape (roughly the size of your tortillas). Cook for 2-3 minutes until the cheese starts to melt and place your tortilla on top of the cheese. Press down. Carefully flip the tortilla using a spatula and cook for another minute until it’s crispy on the other side of the tortilla too. Remove from the pan and set aside to cool slightly. Assemble the tacos : Place one warm tortilla on a plate. Layer on the sliced ribeye steak, a few slices of avocado, and a generous drizzle of chimichurri sauce. Garnish with fresh cilantro, a squeeze of lime, and serve with extra chimichurri on the side if desired. These ribeye tacos will satisfy any craving you might have.
