Grinder Garlic Bread

Ingredients 

Serving Size: 4 people

For the Garlic Confit

  • 2 heads garlic, peeled (about 20 to 25 cloves)

  • 1 cup olive oil

  • Pinch of salt

  • Few cracks black pepper

For the Grinder Garlic Bread

  • 1 large sourdough loaf, halved horizontally
    (use the bottom half)

  • 20 to 25 garlic confit cloves

  • 1/4 cup grated parmesan, plus more for topping

  • 6 to 8 slices turkey

  • 6 to 8 slices ham

  • 3 slices pepper jack

  • 3 slices sharp cheddar

  • 1 large tomato, sliced

  • Flaky salt

  • Black pepper

Grinder Slaw

  • 1 1/2 cups shredded iceberg lettuce

  • 1/4 small red onion, very thinly sliced

  • 2 tbsp mayo

  • 1 tbsp red wine vinegar

  • 2 tsp chopped pickled jalapeños

  • 2 tsp chopped cherry peppers

  • 1 tbsp grated parmesan

  • 1/2 tsp dried oregano

  • 1/2 tsp red pepper flakes

  • Pinch garlic powder

  • Salt and pepper

Instructions 

Make the Garlic Confit

  1. Add peeled garlic cloves and olive oil to a small saucepan. The garlic should be fully submerged.

  2. Place over low heat. You want the oil to gently shimmer, not bubble aggressively.

  3. Cook for about 35 to 45 minutes, stirring occasionally, until the cloves are soft, lightly golden, and spreadable.

  4. Let cool slightly. Reserve the oil because it’s liquid gold for dipping bread or drizzling on top.

Assemble the Grinder Garlic Bread

  1. Heat oven to 425°F.

  2. Place the bottom half of the sourdough loaf on a baking sheet.

  3. Smash the garlic confit cloves directly onto the bread with the back of a fork until evenly spread.

  4. Layer on turkey, ham, pepper jack, and cheddar.

  5. Bake for 10 to 14 minutes until the cheese is deeply melted and the edges of the sourdough are crispy.

  6. While it bakes, toss together all grinder slaw ingredients.

Finish

  1. Remove bread from oven.

  2. Top with tomato slices. Season tomatoes lightly with flaky salt and pepper.

  3. Pile the grinder slaw over top.

  4. Finish with more parmesan and a drizzle of a little reserved garlic confit oil.

  5. Slice into thick pieces and serve hot.
