A Naughty Cheeseburger

Ingredients 

Serving Size: 4 burgers

For the Patties

  • 2 lbs ground beef (80/20), enough for 8 patties

  • Salt & black pepper to taste

  • 2 tsp garlic powder (optional)

  • 8 slices American cheese

  • 2 tbsp unsalted butter (for toasting buns)

For the Big Mac Sauce with Caramelized Onions

  • 1 cup mayonnaise

  • 4 tbsp ketchup

  • 2 tbsp yellow mustard

  • 2 tbsp sweet pickle relish

  • 1 tsp white vinegar

  • 1 tsp paprika

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp Worcestershire

  • Salt & pepper to taste

For the Caramelized Onions

  • 2 medium onions, finely chopped

  • 2 tbsp butter

  • 2 tsp Worcestershire

  • Pinch of salt

For Assembly

  • 4 brioche buns (to make from scratch see recipe here)

  • Dill pickle slices (optional)

  • Lettuce and tomato optional

Instructions 

Step 1: Caramelize the Onions

  1. Heat butter and olive oil in a pan over medium-low heat.

  2. Add the finely chopped onions and a pinch of salt. Cook slowly, stirring occasionally.

  3. After 10 minutes, add Worcestershire.

  4. Continue cooking for 20-30 minutes, until golden brown and jammy. Set aside to cool.

Step 2: Make the Big Mac Sauce

  1. In a bowl, mix mayo, ketchup, mustard, relish, vinegar, paprika, onion powder, Worcestershire and garlic powder.

  2. Refrigerate for at least 20 minutes for flavors to blend.

Step 3: Smash the Patties

  1. Divide ground beef into 8 equal balls (about 2 oz each).

  2. Heat a cast-iron skillet or griddle over high heat until smoking hot.

  3. Place a ball of beef on the skillet, cover it with parchment paper, and smash it super thin with a spatula.

  4. Season with salt, black pepper, and garlic powder.

  5. Cook for 1-2 minutes until edges are crispy, then flip.

  6. Immediately place a slice of American cheese on each patty.

  7. Cook for 30-45 seconds more, then stack two patties together. Repeat for all.

Step 4: Toast the Brioche Buns

  1. Spread butter on the cut sides of the brioche buns.

  2. Toast on a pan until golden brown.

Step 5: Assemble the Burgers

  1. Spread Big Mac Sauce with caramelized onions on both bun halves.

  2. (Optional) Add dill pickle slices on the bottom bun along with lettuce and tomato

  3. Place the double-stacked patties on top.

  4. Top with the toasted brioche bun.
