Toast the dried chiles (guajillo, pasilla, and ancho) for about 1-2 minutes, just until they become fragrant. Don’t burn them! Once toasted, remove the stems and seeds from the chiles. Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes, until golden and soft. Let cool. Make the Butter: In a bowl, mash roasted garlic with all ingredients listed above and set aside. Make the cream cheese spread: Mix together 4 oz cream cheese, 2 tbsp sour cream, ½ tsp red pepper flakes, 1 tsp Italian seasoning, ½ tsp garlic powder, ½ tsp onion powder, Salt and pepper, to taste Assemble the Sandwiches: Spread the garlic butter mixture generously on one side of each bread slice.
