Banana Date Chocolate Oat Cookies

Ingredients 

Serving Size: makes 8-9 cookies

  • 3 large ripe bananas, mashed

  • 3 tbsp sugar-free maple syrup

  • 1 tsp vanilla extract

  • 2 cups rolled oats

  • ¼ tsp salt

  • ¼ cup sugar-free chocolate chips

  • 2 tbsp melted almond butter

  • ¼ cup chopped dates (about 4–5, depending on size)

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mash the bananas until smooth. Stir in the maple syrup, vanilla extract, and almond butter until well combined.

  3. Add the rolled oats and salt, mixing until a thick dough forms.

  4. Fold in the chocolate chips and chopped dates.

  5. Scoop tablespoon-sized amounts of dough onto the baking sheet and flatten slightly with the back of a spoon (they won’t spread much).

  6. Bake for 12–15 minutes, or until the edges are lightly golden and set.

  7. Let cool for a few minutes before devouring—or storing in an airtight container for up to 5 days.
