Ultimate After-The-Pool Sandwich make me Ingredients Serving Size: 1 sandwich For the Sandwich 2 slices sourdough bread 2 slices provolone cheese 1 tbsp butter, softened (for grilling) 1–2 tbsp dijonnaise (Dijon + mayo mix) 3–4 slices deli turkey 3–4 slices deli ham 2 slices sharp cheddar cheese 2 slices pepper jack cheese 2 slices ripe tomato Flaky sea salt handful of doritos (or chips of choice) For the Relish: 1/2 cup finely chopped iceberg lettuce 2 tbsp finely chopped red onion 2 tbsp finely chopped roasted red peppers 1 tbsp chopped pickled jalapeños 1 tbsp chopped banana peppers 2 tbsp mayo 1 tsp red wine vinegar 1/2 tsp Italian seasoning Pinch of salt and black pepper Instructions 1. Make the relish: In a small bowl, mix together the lettuce, red onion, roasted red peppers, jalapeños, banana peppers, mayo, red wine vinegar, Italian seasoning, and a pinch of salt and pepper. Make the Garlic Butter In a small saucepan over medium-low heat, melt the butter. Stir in the minced garlic and a pinch of salt. Cook 1–2 minutes, just until fragrant (don’t brown the garlic). Remove from heat and stir in parsley if using. 2. Prep the Hot Dogs Lightly score each hot dog with shallow diagonal slashes both ways, about ½ inch apart. Grill or pan-sear the hot dogs over medium heat until heated through and slightly blistered, about 5–6 minutes total. Keep warm. 3. Grill the Buns with Cheese Split the hot dog buns open but keep the hinge intact. Brush the outside of each bun generously with the garlic butter. Creamy Braised Beef Rigatoni make me Ingredients Serving Size: 8-10 Beef & Sauce 2 lb (900 g) beef chuck roast or boneless short ribs, cut into 3–4 large chunks 2 tsp kosher salt and 1 tsp black pepper 3 Tbsp olive oil 1 large yellow onion, diced 2 medium carrots, diced 2 celery stalks, diced 4 cloves garlic, minced 2 Tbsp tomato paste 1 cup dry red wine (cabernet, merlot, or similar) 1/2 cup heavy cream 3 cups hot water mixed with 3 tsp Knorr Roasted Beef Base (or to taste) 1 (28 oz) can crushed tomatoes 2 bay leaves 2 sprigs fresh rosemary 3 sprigs fresh thyme Pasta & Finish 1 lb rigatoni pasta 2 tbsp salt 1 cup freshly grated Parmesan cheese, plus more for serving 2 Tbsp butter 1/2 bunch of basil Fresh parsley or basil, chopped, for garnish Instructions 1. Sear the beef Pat beef dry and season all over with salt and pepper. Heat olive oil in a large Dutch oven over medium-high. Sear beef until deeply browned on all sides, about 8 minutes. Honey Dijon Chicken Thighs with Pearl Couscous make me Ingredients Serving Size: 3-4 people Chicken 4 bone-in, skin-on chicken thighs Salt and black pepper 1 tsp garlic powder ½ tsp paprika 1 tbsp olive oil Honey Dijon Sauce 2 tbsp Dijon mustard 1½ tbsp honey 2 cloves garlic, minced 1 tsp whole grain mustard ½ cup chicken broth 1 tsp lemon juice Couscous ¾ cup pearl couscous 1 small shallot, finely diced 1/2 yellow onion, died 1½ tbsp butter 1 cup chicken broth ¼ cup grated parmesan 1–2 tbsp chopped parsley (Optional) Creamy Herby Sauce ½ cup mayonnaise ¼ cup Greek yogurt or sour cream ¾ cup mixed fresh herbs (parsley, basil, chives, dill, or cilantro) 1 small garlic clove 1 tbsp lemon juice 1 tsp honey (or more if desired) Lemon zest of 1 lemon 1 tsp Dijon mustard ½ tsp salt ¼ tsp black pepper 1–2 tbsp olive oil (to thin if needed) Instructions 1. Crisp the chicken Pat thighs dry and season with salt, pepper, garlic powder, and paprika. Heat a cast iron skillet over medium-high heat with olive oil. Place chicken skin side down and cook 6–8 minutes until the skin is deep golden and crispy. Flip and cook 2–3 minutes , then remove to a plate. 2. Toast the couscous Lower heat to medium. Add butter, shallot, and onion to the skillet and cook 2 minutes . Add pearl couscous and toast 2–3 minutes until lightly golden and nutty. 3. Make the sauce Whisk together: Dijon, honey, whole grain mustard, garlic, ½ cup chicken broth, lemon juice. Pour into the skillet with the couscous. Add the extra 1 cup broth and stir. 4. Finish cooking Nestle the chicken thighs skin side up into the couscous. Transfer the skillet to a 375°F oven and bake 18–20 minutes , until chicken reaches 165°F and couscous is tender. 5. Herby Sauce Add all ingredients to blender and blend until smooth and creamy. Stream in a little olive oil if you want it thinner. 5. Finish Remove from oven and grate parmesan on top and sprinkle with parsley. Summer Panzanella Salad make me Ingredients Serving Size: 3-4 people For the Dressing: 1/4 cup extra virgin olive oil 3 tbsp lemon juice Zest of 1 lemon, plus more for garnish 3 cloves grated garlic 1/2 tsp dijon mustard 1 tsp honey 1/2 tsp sea salt Freshly cracked black pepper 1/2 tsp red pepper flakes For the Salad: 1/2lb sourdough, cut into cubes 3 small cucumber, sliced into moons (I did on a diagonal) 1 large shallot, sliced thin 3 medium peaches, cut into pieces 2 large heirloom tomatoes, cut into cubes 1 cup basil, chopped, plus more for garnish 2 balls of burrata, for garnish Flaky Sea salt, for garnish Instructions To make the croutons: Preheat oven to 400F and place sourdough (or bread of choice) on a baking sheet and drizzle with olive oil (can add flaky salt as well if desired). Toss and bake for 10-12 minutes or until browned and crunchy. To make the dressing: Whisk together all dressing ingredients in a large bowl that you will mix the salad in To make the salad: In the large bowl with the dressing, add all of your salad ingredients (without the garnishes) and use your hands to toss and coat everything in the dressing.
