Honey Dijon Chicken Thighs with Pearl Couscous

Ingredients

Chicken
4 bone-in, skin-on chicken thighs
Salt and black pepper
1 tsp garlic powder
½ tsp paprika
1 tbsp olive oil
Honey Dijon Sauce
2 tbsp Dijon mustard
1½ tbsp honey
2 cloves garlic, minced
1 tsp whole grain mustard
½ cup chicken broth
1 tsp lemon juice
Couscous
¾ cup pearl couscous
1 small shallot, finely diced
1/2 yellow onion, died
1½ tbsp butter
1 cup chicken broth
¼ cup grated parmesan
1–2 tbsp chopped parsley
(Optional) Creamy Herby Sauce
½ cup mayonnaise
¼ cup Greek yogurt or sour cream
¾ cup mixed fresh herbs (parsley, basil, chives, dill, or cilantro)
1 small garlic clove
1 tbsp lemon juice
1 tsp honey (or more if desired)
Lemon zest of 1 lemon
1 tsp Dijon mustard
½ tsp salt
¼ tsp black pepper
1–2 tbsp olive oil (to thin if needed)
Instructions
1. Crisp the chicken
Pat thighs dry and season with salt, pepper, garlic powder, and paprika.
Heat a cast iron skillet over medium-high heat with olive oil.
Place chicken skin side down and cook 6–8 minutes until the skin is deep golden and crispy.
Flip and cook 2–3 minutes, then remove to a plate.
2. Toast the couscous
Lower heat to medium.
Add butter, shallot, and onion to the skillet and cook 2 minutes.
Add pearl couscous and toast 2–3 minutes until lightly golden and nutty.
3. Make the sauce
Whisk together: Dijon, honey, whole grain mustard, garlic, ½ cup chicken broth, lemon juice. Pour into the skillet with the couscous. Add the extra 1 cup broth and stir.
4. Finish cooking
Nestle the chicken thighs skin side up into the couscous.
Transfer the skillet to a 375°F oven and bake 18–20 minutes, until chicken reaches 165°F and couscous is tender.
5. Herby Sauce
Add all ingredients to blender and blend until smooth and creamy.
Stream in a little olive oil if you want it thinner.
5. Finish
Remove from oven and grate parmesan on top and sprinkle with parsley. Serve with optional herby sauce
