    A Summer Sandwich make me Ingredients Serving Size: 2 sandwiches For the Charred Jalapeño Lemon Herb Aioli 2 medium jalapeños, seeded 1 whole egg 1 egg yolk 1 cup avocado oil 2 cloves garlic 1 lemon, juiced 1 tsp lemon zest 1 tsp Dijon mustard 1/2 tsp kosher salt 1/4 tsp black pepper 2 tbsp chopped cilantro 1 tbsp chopped parsley 1/2 tbsp chopped green onion 1 tsp honey For the Marinated Red Onions 1/2 small red onion, thinly sliced 2 tbsp olive oil 1 tbsp balsamic vinegar 1/2 tsp dried oregano Pinch kosher salt For the Sandwiches 4 slices sourdough bread 6 slices deli turkey 6 slices deli ham 6 slices sharp white cheddar 4 slices provolone 4 slices heirloom tomato Butter lettuce Olive oil, for drizzling Flaky salt Fresh cracked black pepper 1 tbsp butter Instructions For the Jalapeño Herb Aioli Char the jalapeños directly over a gas flame or in a dry skillet until blistered and blackened in spots. Let cool slightly, then remove stems, some of the black parts, and all of the seeds for medium heat. Make the aioli by combining the jalapeños, egg, egg yolk, garlic, lemon juice, lemon zest, Dijon, salt, pepper, herbs and honey in a tall jar or blender cup. Blend using an immersion blender while slowly streaming in the avocado oil until thick and creamy. For the Marinated Red Onions In a small bowl, toss the sliced red onions with olive oil, balsamic vinegar, oregano, and salt. Let marinate for at least 20 minutes. For the Sandwiches Preheat the broiler to high. On an oven safe sheet pan, add your deli meats and top with cheese. Place in oven and keep an eye on it. Remove once bubbly and melty. In a skillet on medium/high heat, add 2 tbsp butter and 1 slice of sourdough bread, top with 2 slices of provolone, and then your other slice of bread. Flip until melty and golden on both sides. Remove from heat. Spread jalapeño herb aioli generously onto both sides of each slice of sourdough bread. Layer your meats and cheese onto the bottom slices of bread. Assemble the sandwiches Butter one side of each slice of bread. On the unbuttered side of two slices, divide the fontina, gruyère, and brie. Spoon some berry compote over each, and close the grilled cheese. Top with the remaining slices of bread, buttered side facing out. 3. Grill Heat a skillet over medium low. Cook sandwiches for 3 to 4 minutes per side, pressing gently, until golden brown and crisp and the cheese is melted. Drizzle with honey and continue to grill on both sides until caramelized a bit. Bake for about 30-35 minutes or until the tomatoes have softened and started to caramelize. 2. Make the Pesto: In a food processor or blender, combine the basil leaves , garlic , and pine nuts . Pulse a few times to break down the ingredients. Add the grated Parmesan and pulse again. With the processor running, slowly drizzle in the olive oil until the mixture becomes a smooth paste. If you prefer a looser consistency, you can add more olive oil, 1 tablespoon at a time. Add salt and freshly cracked black pepper to taste. For an extra touch of freshness, add 1 tbsp lemon juice (optional) and blend again. 2. Cook the Pasta: Bring a large pot of salted water to a boil. Once boiling, add the pasta and cook for 2 minutes less than the package directs for al dente. Drain the pasta and drizzle with a little olive oil to prevent sticking. 2. Prepare the Cheese: Shred the cheddar, gruyère, gouda, and mozarella cheeses. Toss the cheeses for mac sauce together to mix, and separately toss the cheeses for the layering together and set aside. 3.     Steak Frites & Herb Lemon Cowboy Butter make me Ingredients Serving Size: 2-3 people For the Steak 1 large boneless ribeye (12–16 oz) 1 tbsp olive oil Kosher salt and freshly cracked black pepper 2 tbsp unsalted butter 2 garlic cloves, smashed 2 sprigs fresh rosemary For the Crispy Fries 2 large russet potatoes Neutral oil for frying (peanut, canola, or avocado oil) Kosher salt Flaky sea salt, for finishing For the Herb Cowboy Butter 8 tbsp (1 stick) unsalted butter, melted 2 tbsp cold unsalted butter, in little cubes 2 tbsp very finely chopped fresh parsley 1 tbsp very finely chopped fresh chives 1 tbsp very fine chopped tarragon 1 tsp finely chopped fresh thyme leaves 2 garlic cloves, finely grated 2 tsp fresh lemon juice 1/2 lemon zest 1 tsp Dijon mustard ¾ tsp smoked paprika ½ tsp Worcestershire sauce ½ tsp red pepper flakes ½ tsp kosher salt, plus more to taste ¼ tsp freshly cracked black pepper Instructions Make the Fries Cut and soak: Slice the potatoes into thin fries and soak them in cold water for at least 30 minutes. Dry thoroughly: Drain and pat completely dry. Make sure they’re dry!! First fry (cook the inside): Heat oil to 325°F . Fry the potatoes in batches for 4–5 minutes , until softened and pale blonde. They should not brown. Drain and cool: Transfer to a wire rack or paper towel-lined sheet pan. Let cool for at least 15 minutes. (You can even refrigerate them for an hour.) Second fry (crisp them up): Increase the oil temperature to 375°F . Fry again for 2–3 minutes , until deeply golden and crisp. Season immediately: Transfer to a wire rack and season generously with kosher salt while hot. Make the Cowboy Butter In a bowl, whisk together the butter, parsley, chives, thyme, garlic, lemon juice, Dijon, smoked paprika, Worcestershire, red pepper flakes, salt, and black pepper until smooth. Add in a few of cubes of the cold butter at a time and continue whisking until the sauce begins to thicken into the consistency you’d like. Set aside. Cook the Ribeye Pat the ribeye dry and season generously with salt and pepper. Heat a cast-iron skillet over high heat until smoking hot. Add the olive oil and sear the steak for about 3–4 minutes per side for medium-rare. During the final minute, add the butter, smashed garlic, and rosemary, then baste continuously. Transfer to a cutting board and rest for 10 minutes. Assemble Slice the ribeye against the grain and place alongside a generous pile of crispy fries. Spoon the warm cowboy butter over the steak and let some drizzle onto the fries. Finish with flaky sea salt and an extra sprinkle of fresh chives. Make the mini meatballs Combine the beef, Parmesan, breadcrumbs, egg, garlic, parsley, salt, pepper, oregano and red pepper flakes. Mix gently until just combined.
