Honey Berry Compote Grilled Cheese

Ingredients 

Serving Size: 2 sandwiches

  • 4 slices sourdough bread

  • ¼ cup grated fontina

  • ¼ cup grated gruyère

  • 6 slices brie

  • ½ cup blueberries

  • ½ cup blackberries

  • 2 teaspoons sugar

  • 2 teaspoons fresh lemon juice

  • 1 teaspoon lemon zest

  • 2 teaspoons fresh thyme leaves (optional)

  • honey, for drizzling

  • 4 tbsp Butter, for grilling

Instructions 

1. Make the berry compote
In a small skillet over medium heat, add blueberries, blackberries, sugar, lemon juice, and lemon zest. Cook for 4 to 5 minutes, stirring occasionally, until the berries burst and cook down into a loose, glossy compote. Stir in thyme, if using. Let cool slightly.


2. Assemble the sandwiches
Butter one side of each slice of bread. On the unbuttered side of two slices, divide the fontina, gruyère, and brie. Spoon some berry compote over each, and close the grilled cheese.

Top with the remaining slices of bread, buttered side facing out.


3. Grill
Heat a skillet over medium low. Cook sandwiches for 3 to 4 minutes per side, pressing gently, until golden brown and crisp and the cheese is melted. Drizzle with honey and continue to grill on both sides until caramelized a bit.

Finish
Slice and Finish with thyme leaves, if desired.

If a grilled cheese and a baked brie had a very delicious baby, this would be it. Toasted sourdough is stuffed with melty cheese, spoonfuls of lemony berry compote, and a drizzle of honey for a sandwich that is your new obsession.
