Roast the Tomatoes: Preheat your oven to 335°F (200°C) . Add all of your ingredients to an 8x8 baking dish. Bake for about 30-35 minutes or until the tomatoes have softened and started to caramelize. 2. Make the aioli: In a small bowl, whisk together the mayo, chili crisp, hot honey, lemon juice, and a pinch of salt until smooth and creamy. Adjust heat/sweetness to your taste. 3. Club Sandwich with Tarragon Honey Dijon make me Ingredients Serving Size: 1 large sandwich For the Creamy Tarragon Honey Mustard ⅓ cup plain Greek yogurt ⅓ cup mayonnaise 2 garlic cloves, finely grated ½ tsp onion powder ¼ tsp kosher salt 2 tsp honey 1 tsp extra virgin olive oil 3 tsp Dijon mustard 1 tbsp finely chopped fresh tarragon 1 tsp finely chopped fresh dill Freshly cracked black pepper, to taste 1/2 fresh lemon, juiced For the Club Sandwich 3 slices thick-cut sourdough or country white bread 1 tbsp softened butter 2-3 slices roasted turkey breast 4 slices honey ham 1-2 slices sharp white cheddar cheese 2 slices provolone 3 slices thick-cut bacon, cooked until crispy 2 slices of prosciutto, cooked until crispy 2 ripe tomato slices (one tomato) 4 leaves romaine or iceberg lettuce Flaky sea salt Instructions 1. Make the Tarragon Honey Mustard In a medium bowl, whisk together the Greek yogurt, mayonnaise, garlic, onion powder, salt, sugar, olive oil, Dijon, and lemon juice until smooth. Fold in the chopped tarragon and dill, then season with black pepper. Refrigerate for at least 15 minutes while preparing the sandwich. 2. Cook the Bacon Preheat oven to 400 and line a baking sheet with your bacon. Line another smaller baking sheet with the prosciutto on parchment paper. Place the bacon in the cold oven and allow to cook until deeply golden and crisp (15-20 mins). Once preheated, add your prosciutto and cook for 9sih minutes. Transfer to a paper towel-lined plate. 3. Toast the Bread Add 1 tbsp butter to a skillet on medium/high heat and once melted, add your bread next to eachother. note: I made a grilled cheese in the video but it is easier to grill them separetly rather than as a sandwich and pulling it apart. Add your provolone slices to each slice and cover to allow to grill and melt. Remove from heat when crispy. 4. Build the First Layer Spread a generous layer of the tarragon herb sauce over both slices of toast. Top with: 1 tomato slice (seasoned with flakey salt and pepper) 2 Lettuce leaves Half of the Ham Half of the Turkey Half of the Bacon Place a second slice of toast on top. 5. Build the Second Layer Spread more tarragon herb sauce over the second slice of toast. Layer with: 1 slice of pepper jack cheese 1 slice of tomato 2 lettuce leaves ham turkey Prosciutto finish with the final slice of toast. 6. Slice and Serve Secure the sandwich with four toothpicks and slice diagonally into quarters. Serve immediately with crispy fries, kettle chips, or a dill pickle. A great club sandwich is all about layers, but the sauce is what ties everything together. Sticky Honey Garlic Chicken Thighs make me Ingredients Serving Size: 4-5 people 4-6 bone-in, skin-on chicken thighs 2 tbsp olive oil 1 tsp chili powder 1 tsp smoked paprika 1 tsp salt 1/2 tsp pepper 1 tsp cumin 1 tsp garlic powder 1 tsp onion powder 1/2 tbsp olive oil For the sauce: 2 tbsp honey 4 garlic cloves, minced 1/4 cup soy sauce 1 tbsp chili crunch 1 tsp sesame oil 1 tsp grated ginger 2 tbsp olive oil Instructions In a small bowl, combine all of the spices and the olive oil. Mix thoroughly. 2. Preheat Oven & Prepare Chicken : Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels, and season both sides with spice mixture (get under the skin) and bake for 30 minutes skin-side up and then another 15 minutes on the other side. Remove from oven. 3. Make the Sauce : Mix together the honey, garlic, soy sauce, chili crunch, sesame oil and ginger in a small bowl. In a saucepan on medium heat, add 2 tbsp olive oil. Add your 4 cloves of minced garland cook until frangrant, about 2 mins. Then add your chicken thighs skin side down so they can get crispy. Roughly 3 mins. Add your sauce to the chicken and allow to reduce, 6-7 minutes until it thickens and you can coat your chicken in the sauce. Serve with rice and veggies! The Naughty Sandwich make me Ingredients Serving Size: 2 sandwiches For the Chili Crunch Aioli: 1/2 cup mayonnaise 2 tablespoons chili crunch (store-bought or homemade) 1 tsp sriracha 1 tsp garlic, minced 1 tsp rice vinegar 1/2 tbsp honey Salt and pepper to taste For the Sandwich: 2 tbsp butter, for toasting 4 slices sourdough bread (or bread of choice) Chili Crunch Aioli 8 slices spicy salami 8 slices prosciutto (can use any cured meats you like) 1/2 cup shredded gruyere cheese 1/2 cup black truffle stracciatella (can use burrata) 4 slices beefsteak tomato Maldon sea salt to taste Instructions 1. Make the Chili Crisp Aioli: In a small bowl, whisk together the ingredients above until combined. Set aside. 2. Assemble the Sandwich: Spread a thin layer of softened butter on one side of the bread and lay the bread on a skillet on medium heat. Begin layering with a dollop of chili crunch aioli, slices of spicy salami and prosciutto. Then add the shredded gruyere and stracciatella on top. Then add your tomatoes, salt (if desired) and other half of the bread that should also have a thin layer on butter on the outside. Press down and flip until both sides are perfectly crispy and browned. Cheez-It Crunch Salad make me Ingredients Serving Size: 4-5 people Salad Ingredients: 1 small onion, diced 1 ripe avocado, diced 1 large tomato, diced 1 cup corn kernels (fresh or frozen) 1/2 cup fresh parsley, chopped 1 red bell pepper, diced 1/2 cup Cheez-Its (or a full cup why the hell not) Green Goddess Dressing: ½ cup fresh dill 1/3 cup fresh mint leaves ½ cup parsley leaves 1/3 cup packed fresh basil leaves 2 cloves garlic, thinly sliced 3 scallions (white and light green parts only, about ½ cup) ¼ teaspoon ground coriander Juice of 1 lemon ½ cup goat cheese, room temperature ½ cup mayonnaise ¼ cup sour cream 2 teaspoons agave syrup 1 teaspoon kosher salt Freshly ground black pepper to taste Instructions Make the Green Goddess Dressing: In a food processor, combine the fresh dill, mint, parsley, basil, garlic, scallions, coriander, and lemon juice. Add the goat cheese, mayonnaise, sour cream, agave, kosher salt, and black pepper. Blend until smooth and creamy. Mini Croissant Grinder Sandwiches make me Ingredients Serving Size: 8 sandwiches For the Sandwich Base: 8 mini croissants, sliced in half 16 slices deli ham 16 slices deli turkey 16 slices soppressata 8 small slices provolone (halved) 16 small slices sharp cheddar (halved) 1/3 cup dijon mustard 2 tbsp melted butter + 1 tsp Italian seasoning mixed in ¼ cup finely shredded parmesan (for topping) 1 large tomato, thinly sliced For the Grinder Slaw: 2 cups shredded iceberg lettuce ½ small red onion, diced ⅓ cup diced banana peppers ⅓ cup mayo 1 tbsp red wine vinegar 1 tsp Italian seasoning ½ tsp red pepper flakes ½ tsp kosher salt 1 tsp honey ¼ cup grated parmesan cheese Instructions 1. Make the Grinder Slaw: In a large bowl, whisk together mayo, red wine vinegar, Italian seasoning, red pepper flakes, salt, honey, and grated parmesan. Toss in the shredded lettuce, red onion, and banana peppers until well coated. Set aside to chill and meld. 2. Assemble the Sandwiches: Preheat your oven to 400°F (or broil if your oven has a broil setting). On a baking sheet, lay out the bottom halves of the croissants. Spread with a little Dijon mustard. Layer on two slices each of ham, turkey, and sopressata. If they are big slices, you can do one of each. Top each with half a slice of provolone and 1 slice of cheddar each. Place the top of the croissants on the banking sheet as well. 3. Butter & Parm the Tops: Brush the tops of the croissants with melted butter and sprinkle generously with shredded parmesan. 4. Broil It Up: Place open-faced sandwiches (tops and bottoms) on a baking sheet and broil until the cheese is melted and bubbly, and the croissant tops are golden and toasty—about 2–3 minutes. Keep an eye on them so they don’t burn! 5. Finish with Slaw & Tomato: Remove from the oven. Top each bottom half with a tomato slice and a generous scoop of grinder slaw. Add the parm-crusted croissant top and gently press down. Serve! Fireworks? Great. Grilling? Duh. Herby Greek Chicken Thighs & Roasted Veggies make me Ingredients Serves: 2-3 people For the Marinade: 1/4 cup olive oil Juice of 1/2 lemon 4 garlic cloves, minced 1 cup 0 fat greek yogurt 2 teaspoons dried oregano 1 teaspoon paprika 1/2 teaspoon chili powder 1 teaspoon dried thyme 2 teaspoon kosher salt ½ teaspoon freshly ground black pepper Spices for the Vegetables: 2 tablespoons olive oil 1 teaspoon dried oregano 1/2 teaspoon paprika ½ teaspoon garlic powder 1 teaspoon kosher salt ¼ teaspoon black pepper For the Chicken and Vegetables: 4 large bone-in, skin-on chicken thighs 1 medium zucchini, halved lengthwise and sliced 1 yellow bell pepper, chopped ½ large red onion, thinly sliced 1 pint cherry or grape tomatoes 1/2 sweet potato, cubed (optional) ½ cup kalamata olives, pitted ¼ cup feta cheese, crumbled 2 tablespoons finely chopped fresh parsley Instructions Preheat the Oven : Set your oven to 425°F (220°C). Marinate your Chicken : In a small bowl, add your chicken thighs and all of your marinade ingredients. Mix with your hands and make sure to get under the skin. Cover and refrigerate at least 30 mins or up to 4 hours. 3. Prepare the Vegetables : On a large baking sheet, spread out the zucchini, bell pepper, sweet potato, red onion, and tomatoes. Drizzle with olive oil and season with the spices listed above. Coat with your hands. 4. Assemble and Bake : Nestle the marinated chicken thighs among the vegetables on the baking sheet. Bake in the preheated oven for 30 minutes. 5. Add Final Touches : Remove the baking sheet from the oven and sprinkle the olives and feta cheese over the chicken and vegetables. Return the sheet to the oven and bake for an additional 15 minutes, or until the chicken is golden and cooked through (internal temperature should reach 165°F) 6. Garnish and Serve : Sprinkle the chopped fresh parsley over the dish before serving. Serve hot, optionally with a side of quinoa and tzatziki (click for recipe).
