Salad Ingredients:
1 small onion, diced
1 ripe avocado, diced
1 large tomato, diced
1 cup corn kernels (fresh or frozen)
1/2 cup fresh parsley, chopped
1 red bell pepper, diced
1/2 cup Cheez-Its (or a full cup why the hell not)
Green Goddess Dressing:
½ cup fresh dill
1/3 cup fresh mint leaves
½ cup parsley leaves
1/3 cup packed fresh basil leaves
2 cloves garlic, thinly sliced
3 scallions (white and light green parts only, about ½ cup)
¼ teaspoon ground coriander
Juice of 1 lemon
½ cup goat cheese, room temperature
½ cup mayonnaise
¼ cup sour cream
2 teaspoons agave syrup
1 teaspoon kosher salt
Freshly ground black pepper to taste
Instructions
Make the Green Goddess Dressing:
In a food processor, combine the fresh dill, mint, parsley, basil, garlic, scallions, coriander, and lemon juice.
Add the goat cheese, mayonnaise, sour cream, agave, kosher salt, and black pepper.
Blend until smooth and creamy. Taste and adjust seasoning if necessary (you can add more salt, pepper, or lemon juice to your liking).
Set aside while you prepare the salad.
Prepare the Salad:
In a large bowl, combine the diced onion, avocado, tomato, corn, parsley, and red bell pepper.
Gently toss to mix all the ingredients together. Top with Cheez-Its
Assemble the Salad:
Drizzle the Green Goddess Dressing over the salad and toss gently to coat the vegetables evenly with the dressing.
