Ingredients
2 heads of garlic
1 tbsp olive oil
1 cup (2 sticks) unsalted butter, softened
¼ cup freshly grated Parmesan cheese
1 tbsp fresh parsley, finely chopped
½ tsp kosher salt (adjust to taste)

½ tsp crushed red pepper flakes (adjust for spice level)
½ tsp lemon zest (optional, for brightness)
Instructions
1. Roast the Garlic
Preheat oven to 400°F (200°C).
Slice the top off the garlic heads to expose the cloves.
Drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.
Let cool, then squeeze out the roasted garlic cloves and mash into a paste.
2. Make the Compound Butter
In a mixing bowl, combine softened butter with the roasted garlic paste.
Add Parmesan, parsley, thyme, salt, pepper, chili flakes, and lemon zest (if using).
Mix well until fully incorporated.
3. Store & Use
