Roasted Garlic Compound Butter

Ingredients 

  • 2 heads of garlic

  • 1 tbsp olive oil

  • 1 cup (2 sticks) unsalted butter, softened

  • ¼ cup freshly grated Parmesan cheese

  • 1 tbsp fresh parsley, finely chopped

  • ½ tsp kosher salt (adjust to taste)

  • ½ tsp black pepper

  • ½ tsp crushed red pepper flakes (adjust for spice level)

  • ½ tsp lemon zest (optional, for brightness)

Instructions 

1. Roast the Garlic

  • Preheat oven to 400°F (200°C).

  • Slice the top off the garlic heads to expose the cloves.

  • Drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.

  • Let cool, then squeeze out the roasted garlic cloves and mash into a paste.

2. Make the Compound Butter

  • In a mixing bowl, combine softened butter with the roasted garlic paste.

  • Add Parmesan, parsley, thyme, salt, pepper, chili flakes, and lemon zest (if using).

  • Mix well until fully incorporated.

3. Store & Use

  • Spoon the butter onto a sheet of parchment paper or plastic wrap.

  • Roll into a log, twist the ends, and refrigerate for at least an hour to firm up.

  • Slice and use on steaks, roasted veggies, grilled bread, or pasta!
