Ingredients
Serving Size: 5-6 people
Base:
1 bag pita chips (plain or garlic-flavored, I used Stacys)
Toppings:
1 cup diced cucumber
1 cup cherry tomatoes, quartered
½ small red onion, finely diced
½ cup pickled red onions
½ cup Kalamata olives, sliced
½ cup crumbled feta
2 tbsp chopped fresh parsley
½ cup hummus (store-bought or homemade)
½ cup tzatziki (store-bought or homemade)
Dressing:
3 tbsp olive oil
1 tbsp red wine vinegar
½ tsp dried oregano
Salt and freshly cracked black pepper, to taste
Instructions
Make the dressing:
In a small bowl or jar, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Set aside.Layer the base and add toppings:
Arrange the pita chips on a large serving platter or shallow bowl. Scatter cucumber, tomatoes, red onion, pickled onions, olives, and feta evenly over the chips.
Add generous spoonfuls of hummus and tzatziki across the top.Drizzle the goods:
Finish with a generous drizzle of your tangy oregano vinaigrette.Garnish and serve:
Sprinkle with fresh parsley and serve immediately before the chips soften.
