Crack Chicken Salad

Ingredients
Serving Size: 5-6 servings
1 rotisserie chicken, shredded (I used Publix original rotisserie chicken and used both white and dark meat)
1 ¼ cups Greek yogurt
1 ½ tablespoons Dijon mustard
1 lemon, zested and juiced
¼ cup parsley, chopped
½ Honeycrisp apple, diced
1/2 red onion, diced
¼ cup dried cranberries
1 ½ teaspoons flaky sea salt
Freshly cracked black pepper, to taste
2 teaspoons agave
4 stalks celery, diced (about ½ cup)
Instructions
In a large bowl, combine all ingredients.
Toss everything together until evenly coated.
Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.
Serve chilled, piled into lettuce cups, sandwiches, wraps, with crackers— or just straight from the bowl.
* keep in mind that if you are only using white meat you will have less to work with, and thus should adjust amount of other ingredients*
