For the Salmon Bites:
2 salmon fillets, skin removed, cut into 1-inch cubes
1 tbsp olive oil
Juice of 1 lime
1 tbsp honey
1 tbsp chipotle in adobo (minced)
1 tsp smoked paprika
½ tsp garlic powder
Salt and pepper to taste
For the Mango Corn Salsa:
1 ripe mango, diced
½ cup corn (fresh, canned, or grilled)
½ cup cherry tomatoes, halved
1 small jalapeño, finely chopped
1 tbsp red onion, finely diced
Juice of ½ lime
Salt to taste
For the Spicy Greek Yogurt Aioli:
½ cup plain Greek yogurt
2 tsp hot sauce
1 tsp chili lime seasoning
½ tsp garlic powder
Juice of ½ lime
Salt to taste
For the Green Sauce:
½ cup fresh cilantro
¼ cup fresh parsley
1/4 cup dill
1 clove garlic
1 tsp honey
1/2 tsp red pepper flakes
Juice of ½ lime
2 tbsp olive oil
1 tbsp water (or more to thin)
Salt to taste
Instructions
Make the marinade: In a bowl, mix together the olive oil, lime juice, honey, minced chipotle in adobo, smoked paprika, garlic powder, salt, and pepper.
Marinate the salmon: Add salmon cubes to the bowl and gently toss to coat. Let marinate for at least 15 minutes (up to 30 for more flavor).
Cook the salmon: Heat a drizzle of oil in a nonstick skillet over medium-high heat. Sear salmon for 2–3 minutes per side until golden and cooked through.
Make the Mango Salsa: In a mixing bowl, combine the diced mango, corn, halved cherry tomatoes, chopped jalapeño, and red onion. Squeeze in the lime juice and season with salt. Toss gently and chill in the fridge until ready to serve.
Make the Spicy Greek Yogurt Aioli: In a small bowl, whisk together Greek yogurt, hot sauce, chili lime, garlic powder, lime juice, and salt. Adjust seasoning to taste. Chill until ready to use
Make the Herby Green Sauce: Add cilantro, parsley, dill, garlic, honey, red pepper flakes, lime juice, olive oil, water, and salt to a blender or food processor. Blend until smooth, adding more water 1 tsp at a time if needed to thin to a pourable consistency. Taste and adjust seasoning or acidity as needed.
Assemble Bowl: Start with a base of brown rice in each bowl. Top with salmon bites, mango corn salsa, and sliced avocado. Drizzle generously with spicy aioli and green sauce. Optional: garnish with fresh herbs, chili flakes, or a lime wedge.
