Caramelized Peach and Burrata Sandwich

Ingredients
Serving Size: 2 sandwiches
4 slices good sourdough
2 tbsp salted butter, softened
1 garlic clove, peeled
12 slices prosciutto
2 small balls fresh burrata
2 ripe peaches, sliced thin
1 tbsp butter
1 tsp brown sugar
2 handfuls arugula
Squeeze of fresh lemon
Balsamic glaze, for drizzling
Flaky sea salt
Fresh cracked black pepper, optional
Instructions
Toast your Sourdough
1. In a skillet on medium/high heat add 1 tbsp salted butter and toast the outside of all slices of bread until golden. Set aside.
For the Caramelized Peaches
In the same heated skillet, reduce to medium heat.
Melt 1 tablespoon butter and add peaches with brown sugar.
Cook 3 to 5 minutes until glossy, lightly caramelized, and jammy at the edges.
Set aside.
Build Sandwich
Brush the toasted part of the bread with a little garlic for a kick. Build sandwich but adding your arugula, a squeeze of lemon, 6 slices of prosciutto each, 1 ball of burrata each (broken open), topped with your peaches, a drizzle of balsamic glaze, and a pinch of flaky sea salt and freshly cracked black pepper. Close and serve!
