Burrata Pesto Toast with Prosciutto & Truffle

Ingredients
Serving Size: 2 toasts
Ingredients:
2 thick slice of sourdough bread
1 head of garlic
Olive oil, for roasting & drizzling
Flaky sea salt & freshly cracked black pepper
6 slices of prosciutto
1 ball of burrata
4 Tbsp homemade pesto (see below)
1/2 cup cherry tomatoes, diced
A few drops of black truffle oil or shaved black truffle
Balsamic glaze, for drizzling
For the Homemade Pesto:
(Makes about ½ cup)
1 cup fresh basil leaves
¼ cup Parmesan, grated
¼ cup pine nuts (or walnuts)
1 clove garlic
⅓ cup extra virgin olive oil
Salt & pepper, to taste
Optional: squeeze of lemon juice for brightness
Instructions
Roast the Garlic:
Preheat oven to 400°F (200°C).
Slice the top off a head of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.
Let cool, then squeeze out the cloves and mash into a paste.
2. Toast the Bread:
Brush sourdough with a little olive oil and toast in a hot skillet or under the broiler until golden and crispy on both sides.
3. Make the Pesto (if not already made):
Blitz all pesto ingredients in a food processor until smooth but still textured. Adjust seasoning to taste.
4. Prepare the Tomatoes:
In a small bowl, toss halved cherry tomatoes with a drizzle of olive oil, salt, and pepper.
5. Assemble:
Spread a generous layer of roasted garlic paste on the toasted sourdough.
Lay down 3 slices of prosciutto.
Spoon or gently tear ½ a burrata over top.
Dollop or swirl the pesto around the burrata.
Tuck in the marinated cherry tomatoes.
Add a few drops of truffle oil or some shaved truffle.
Finish with a drizzle of balsamic glaze and a sprinkle of flaky salt and black pepper.
