Serving Size: 12 poppers
6 fresh jalapeños, halved lengthwise, seeds and ribs removed
6 slices bacon, halved crosswise (12 pieces total)
1 Jar Fig jam
Pimento Cheese Filling
1/2 cup sharp cheddar cheese, grated
1/4 cup cream cheese, softened
2 tbsp jarred pimentos, drained and finely chopped
1 tbsp mayo (or similar)
1/4 tsp garlic powder
1 tsp yellow mustard
Salt & pepper to taste
After Baking
2 tbsp hot honey, warmed
1/2 tsp crushed red pepper flakes
1 tbsp fresh basil, finely chopped
Instructions
Preheat oven to 400°F (205°C). Line a sheet pan with foil and place a wire rack on top (helps with crisp bacon).
Make the pimento cheese: In a bowl, mix all filling ingredients until smooth and spreadable.
Stuff the jalapeños: Spoon about 1 tablespoon of pimento cheese into each jalapeño half. Top with about 1/2 teaspoon of fig jam.
Wrap with bacon: Wrap each jalapeño half with a piece of bacon, securing with a toothpick if needed.
Bake: Arrange on the wire rack and bake for 20–25 minutes, or until the bacon is crispy and the peppers are tender.
Finish with flair: Let cool 2–3 minutes, then drizzle with hot honey. Sprinkle with red pepper flakes and chopped basil.
Serve warm or at room temp—these hold up beautifully for parties.
